How long should a keg be held in cold storage prior to service to ensure that it doesn't foam?

When a keg of beer is filled it needs to be kept in a cold environment and should be used within 10 days. If a keg is kept in a warm environment for a long time, it can start to foam and the beer’s flavour will be affected.

A keg should be kept cold for at least two weeks before it is tapped. It should also be purged with CO2 and kept in the refrigerator for a few hours. This will reduce the chances of the beer foaming when it is tapped.

A keg should be held in cold storage for 10 days prior to being tapped and served. Temperature is the key factor in foaming. Each time a keg is shipped, it is subjected to temperature changes which may cause the beer to foam.
